Brownie weather

It’s raining. Both kids are sick – too sick for walks in the rain and birthday parties so instead it’s brownie and moomin mug weather.
Easy Brownies
150g (5 oz) softened butter
1 cup caster sugar
3/4 cup cocoa
2 eggs
1 cup of self-raising flour
I have also made these for vegans twice by using egg replacer and margarine and they worked a treat.
Preheat the oven to 180°c (350°f). Beat butter and sugar until light and fluffy. Add cocoa, eggs and flour and mix until nicely combined. Spoon the mixture into a muffin tin and bake for 10-12 minutes or until cooked but gooey in the centre. Tip out of the tin (very gently! Some of mine flattened on impact) and devour warm.
If you are like me you will, at some stage during this recipe, create an enormous cloud of cocoa powder which covers your perfectly clean tshirt, jeans, shoes and floor in a lovely layer of brown. Amuses children endlessly.

It’s raining here as well, and you’re right: perfect moomin mug weather. I might go for a walk in the rain and while i’m at it, get the ingredients for those brownies =)

Ack. We are in the same boat today – the big one still recovering and the littlest in the thick of icky winter ilnesses. Your brownies look delicious, I’m sure they will fend off the cabin fever brilliantly. Hope you’re all better soon. xo

The muffin looks very tasty – I was going over the contents of the pantry to see if I could start straightaway, and then it sunk in. I’m in the Netherlands, and my parents’ house has a severe shortage of brownie tins. Oh well. Someday!
Hope the little ones get better soon – surely a moomin mug must help.

Hi, I just wanted to thank you for the recipe, I have made them twice and they were a huge hit in this house. The second time, they were a little dry (I think, cos the eggs were small), but my American sister in law suggested adding a splash of veg oil – worked a charm – a chewy gooey miracle. yum
